When my kids were small, I only let them have cold cereal for breakfast in the summer. During the school year I wanted them to have a hot breakfast to start their day. They ate a lot of oatmeal....I mean a lot! I never bought flavored oatmeal, but they had a lot of fun flavoring their plain oatmeal. This was one of their fall favorites.
It's fun and easy for kids to make, it's packed with all the good vitamins in pumpkin and it tastes delicious. Not to mention you get the good feeling of sending them out the door with a hot, nutritious breakfast that will stick with them all morning!

Here's all you need to make it:
Just make a bowl of plain instant oatmeal. (You can do this with the old-fashioned cook kind too.) Add a couple of tablespoons of pumpkin in, sprinkle with some pumpkin pie spice and stir it up. My kids liked it with a little brown sugar on top, but you could sweeten it a little with maple syrup, apple sauce or plain sugar.
However you make it, it's tough to get kids to eat oatmeal sometimes, but if you're a little creative and if they can fix their own, you might be surprised at how much they like it.
I have to say I was blessed with kids who were willing to try just about every food. They were physically healthy and for that I am grateful! They were kind of cute when they were little too. (Since they were adopted, I have someone else to thank for that!)
They're all grown up now and they still love oatmeal!
